Post yoga mind blurt and lazy peoples mini frittatas





For anyone that has never attended yoga you may not be aware that sometimes you have some crazy ass thoughts as your mind runs away to disconnect from society. Sometimes it does, sometimes it doesn’t. Sometimes you are still thinking about where to go for dinner Friday night or how much you wish you bought those boots the other day. Do’h! 

But tonight I was in crazy ass thought mood after listening to what my teacher was reading to us about the philosophies of yoga. And this is where my mind went! LOL!

Everyday we view the world from the comfort of our own personal movie theatre. Everything we see is through only our own perspective. We cannot hear through someone else’s ears, see through their eyes, smell through their noses and truly experience the world the way they experience it. It is impossible for us to watch anyone else’s movie in their movie theatre.  So wouldn't it be true that when we think that others are judging how we look, how we act or what we do, that it is actually just our own perception of ourselves and not of that of others?? So really it is our own harsh judgements that create our insecurities. Because after all we are watching our own movie, jay??


And now for a light hearted egg recipe!

Lazy peoples mini frittatas


I make these at the start of the week and keep them in a container in the fridge and are a great snack or make into a meal. Just grab a couple of these and a huge sided salad!

Ingredients:

1 small head of broccoli broken in to tiny pieces
1/2 capsicum finely diced
1/2 zucchini finely diced
1 teaspoon crushed garlic or 1 small clove crushed
1 teaspoon oregano
 8 eggs
coconut oil or grass fed butter

* Pre heat you oven to 160 degrees
* Grease a muffin tray with coconut oil or butter
* Whisk eggs in a bowl, then and garlic, oregano and pepper and salt to season 
* Distribute the veggies evenly over 8 muffin holes


       
    

       *Pour the egg mixture evenly over each veggie mixPlace in the oven for approximately 25-30 minutes or until the egg has cooked through.

Note:  as per usual I like for these recipe ideas to just be guidelines because everyone should bring their own awesomeness to everything they create. So get crazy with it! Use different veggies, pumpkin, sweet potato, grated carrot, eggplant what ever your kids didn’t eat last night at dinner!!! You can try different herbs and spices.

Quick tip:  If you want to cut down time even more you don’t even have to whisk the  eggs, just crack an  egg on each veggie case. 1 egg for every frittata just make as many as you need!
