Smokey Roasted Vegetable Toss

You can make this with any vegetables you like. Pumpkins, zucchini and beetroot are my favs but whatever you have on hand just throw it in!

Smokey Roasted Vegetable Toss


1/2 small pumpkin
1 large beetroot (or 2 smaller)
1 sweet potato
1 small brown onion
1 capsicum
4 tbs olive oil
3 tsp paprika
2 tsp oregano
1 tsp curry powder
sea salt

Preheat oven to 220 degrees
Wrap beetroot in foil with skin on and place in oven for 30 mins
Meanwhile chop all vegetables into large chunks
Remove beetroot and peel skin off. Cut into chunks
Place beetroot on a separate baking tray lined with foil.
Toss remaining vegetables in olive oil, paprika, curry powder, oregano and salt.
Arrange onto a foil lined baking tray and bake for 50 mins
Once done toss all vegetables together and serve on a bed of spinach or rocket!
